Sangster & Company were appointed, through negotiation, by Orry, Bruce and the team behind Falls by Orry Shand as Principal Contractor for the complete renovation and fit-out of this exceptional hospitality destination.
Working alongside Scarinish, the appointed interior designer and a carefully selected team of skilled local craftsmen and specialist subcontractors, the project transformed an existing cottage into an intimate contemporary restaurant that balances refined luxury with the character and heritage of its remarkable setting.
Completed within an ambitious 16-week programme, the project required meticulous planning, exceptional attention to detail and seamless collaboration throughout every stage of construction. The works comprised a comprehensive refurbishment of the existing building, including significant insulation upgrades, complete electrical rewiring, new plumbing and heating systems, air conditioning to the striking rotunda dining space, premium wall and floor finishes and the complete refurbishment of the customer facilities.
A state-of-the-art commercial kitchen, supplied and installed by GastroNorth, was carefully integrated into the building, creating a highly functional back-of-house environment to support the restaurant’s ambitious culinary offering.
The bespoke joinery package became a defining feature of the project. Working from designs developed by Scarinish, our in-house team manufactured and installed the restaurant’s custom cabinetry, feature timber detailing and statement bar, each individually crafted to combine functionality with timeless design.
A dedicated wine experience was also created, incorporating a bespoke wine display, integrated wine chiller and purpose-built sommelier station, carefully designed to provide both theatre and practicality within the dining space. A bespoke barista station was constructed within the staff facilities, ensuring every part of the building received the same uncompromising standard of finish and attention to detail.
Throughout the interior, our in-house decorating team applied specialist limewash finishes, creating a rich depth and texture that complements the carefully curated material palette. Carefully considered architectural lighting enhances the ambience throughout the restaurant, highlighting the bespoke joinery and creating a warm, sophisticated dining environment.
Every aspect of the project was delivered with an uncompromising commitment to quality, precision and attention to detail. Completed on programme, Falls by Orry Shand stands as an outstanding example of what can be achieved through close collaboration between client, designer, specialist subcontractors and principal contractor.
